Grandmas Banana Nut Loaf

Fantastic treat anytime

Ingredients:

1 1/4 cup butter
2 cups sugar
4 eggs
1/4 teaspoon salt
2 teaspoon soda
3 cups flour
1 cup uncooked rolled oats
6 very ripe large bananas
1/2 cup walnuts pieces
1/2 cup pecan pieces
1 cup cranberrys, dried
1 teaspoon vanilla


Icing:

1 cup confectioner's sugar
1/2 stick margarine
1/4 teaspoon vanilla
1/4 teaspoon cinnamon
1/2 banana, creamed (optional)

Directions:

1. Preheat oven to 325F degrees. Melt butter, let cool slightly.

2. Cream together butter sugar and bananas. Add eggs one at a time to fully incorporate into mixure. Add vanilla.

3. Add flour, salt, and soda to bowel. I always add salt and soda to the flour before putting in the mixer bowel. Add oats

4. Stir in nuts and cranberries until fully incorporated. (most stand mixers have a stirring paddle that works great for this)

Pour into pans, bake for 1 hour 25minutes or until cake tester inserted into middle comes out clean.

To make the Icing:

cream all ingredients together until smooth.
